  February 03, 2003 | How to: Beans on toast


1. Open can of beans. Pour into a pan.


2. Place pan over heat.


3. Put desired amount of bread in toaster


4. Mmm, beans...


5. Stir the beans.


6. If bread has toasted in a satisfactory manner proceed to butter it to taste.


7. Once beans have become viscous and bubbly, remove from heat and drizzle over the buttered toast.


8. Mange mange mange.


9. Wash up using water, detergent, sponge and elbow grease.

As an experienced reheater of beans, I would like to think I am something of a connoiseur. Therefore, I would dispute your point 7: the beans should certanly not be allowed to bubble.By far the best way of cooking baked beans is to leave them on a very low heat for as long as you can bear to. If possible, leave them warming for half an hour or longer, but never bring them to the boil. They'll go hard and the sauce will start to denature. Cooking beans in this way is quite tolerable if you've also got to prepare the rest of a fried breakfast. Otherwise, good.

Of course, the usual variation on this theme -- here in New Mexico -- would be to let the beans cool down and thicken -- and, then, "refry" them in lard before adding them to the toast. Keeps those arteries really rigid!

I would suggest you always drain off excess sauce this prevents BSSS ( Bean, Sauce, Saturation, Syndrome) which can lead to STD (soggy toast disorder)also stirring in some cheese, it adds an extra dimesion of taste and texture.

An OK receipe but making a Parmigiana (aubergines, mozzarella, parmesan, tomatoe sauce) is almost as easy and much, much nicer
